Date: Thursday, May 7 Time: 11:55 PM Phew! Tonight work was so busy. Just come back not long ago. Very hardcore work and tiring. >.< Started at 5 and finished around 11pm. Okay. Let talk about today class. I had chocolate making class this morning as I mentioned in my previous post. We started of with introduction to the chocolate. There new knowledge now added into my cooking dictonary. (: After introduction, we start with the chef demo how to temper chocolate and make chocolate block out from tempered chocolate. Then we off start with our own work. My partner for today is Bryan from Malaysia also. LOL! We get the milk chocolate from the machine. ![]() This is the machine that we took our milk chocolate. Then we have to make sure is 43 degree. After that, we cool 2/3 the chocolate by moving the chocolate around the marble stone. ![]() ![]() This how we temperd our chocolate on marble stone. We need to get to around 27 degree then we put back into the 1/3 chocolate to get the heat back up to 30 degree. We did it prefectly and we put into the mould to shape the chocolate. ![]() This the mould we put our chocolate in. Then we put chocolate on a vibration near the machine to get the bubble out. After that, we put the chocolate in a cooling machine to let it cool down. We have to repeat the process for 3 times so that the chocolate can set. ![]() On the way inside the machine. ![]() Coming out from the machine. The process took 7 minutes for one time. So we clean our bench as the tempering was super messy and make our uniform dirty. Chocolate is the hardest ingredients to keep clean. ![]() Our dirty bench after cleaning up abit. After the process, we take the chocolate and put at the bench for half an hour. Then we go for break while waiting for it to set. Later on after break, we checked our chocolate and still not set. So we put in the fridge for while. Then we got our chocolate out and it was nice. ![]() Chocolate blocks! Look yummy right? xD Zoooom inn~! ![]() Our school name. xD Our chocolate got the 'snap' sound and indicate our chocolate being tempered correctly. It was quite a success for the first attempt. Then we have a second go and repeat the whole process again. The second process turn out to be like this. ![]() Another blocks! It was good and nice for second attempt. (: Then we allowed to bring back home 8 pieces of the small blocks. Bryan didn't want, so he gave his share to me. Hehe~! My housemate and his girlfriend so happy when I bring back chocolate for them. Haha! Anyway this our chef Paul Hugdes's chocolate when showing demo to us. ![]() ![]() Nice ain't them? Although I made you angry and keep get scolding from you, but I know you did that for my own good. I know you won't be reading this. And if you do, I confirmed get scolding from you about my life in Melbourne. I hope I didn't get you worry back home about me living in here. I wanted to tell you how much I miss you and want to celebrate your birthday with you. I already missed 2 years celebration with you. I hope you keep healthy and don't work so hard. I will try to lower down your burden and hopefully I can send some money back to you later on. My Mom birthday is on 2nd May. I was suppose to post it few days ago but I was supposed to get pictures from Vicki. She said she want to wait for Mother's day and buy two things together. Since she willing to help me to buy stuff for my mom, I can't really blame her. Hope I know what she buying for my mom. Look like my wallet will get hole when I go back to Malaysia as I owe Vicki a lot but worth every cents because is for my Mom! (: That's all for now. (: |
